WHO WE ARE :: The Chef and his Team

Our Executive Chef, Felipe Espinosa, joined the House of Morandé kitchen in November 2009, with the aim of setting trends in regional and Casablanca gastronomy. 

Felipe has had a solid academic training at the Escuela Internacional de Artes Culinarias y Servicios, complemented by training courses abroad in prestigious restaurants and hotels, some of the best-known being the Balzac in Madrid, awarded three stars in the Michelin Guide or the Grand Hyatt in Sao Paulo.

Together with out Executive Chef, we have a culinary team made up of five young people from Casablanca. Outstanding among them is our Pastry Chef, Eduardo Oryan, a professional from the Instituto de Formación Técnica, INACAP, who began working in the restaurant as part of his professional practice, when recently qualified. The two Chefs have the support of two cooks and a kitchen assistant to enable them to achieve world-class dishes.
